Whole Wheat Fettuccine with Cilantro Alfredo

PREPARATION

Ingredients

Olive oil

1 fl oz / 30 ml

Onion, yellow, diced   

3.5 cup / 875 ml

Zucchini, diced

1 qt / 946 ml

Corn cob, frozen

1.5 lb / 680 g

Jalapeño Pepper, chopped

2 tbsp / 30 ml

Minor's Roasted Garlic Flavour Concentrate

Gluten Free 6 x 1 pound

1 tbsp / 15 ml

Stouffer's Alfredo Sauce 3 x 1.8 kg, hot

1 pouch / 1.8 kg

Fettuccini, whole wheat

18 oz / 510 g

Cilantro

0.5 cup / 125 ml

 

Method

  1. Heat oil in a large sauté pan over medium high heat. Add the onions, zucchini, corn, jalapeño, and Minor's Roasted Garlic. Cook till vegetables are tender, about 5 minutes. Reserve hot.
  2. Heat Alfredo Sauce to 165 F CCP, according to the package directions, hold warm.
  3. Cook the fettuccini in a large pot of boiling Water until tender, about 10 minutes, drain, reserve.
  4. Mix together the vegetables, Alfredo Sauce, fettuccini, and the cilantro.
  5. Serve 11 ½ oz / 325 g per serving.
