Black Bean Relish, Gluten Free*

Ingredients

Black Beans, tinned, drained, rinsed

540 ml / 19 fl. oz

Tomatoes, small dice

84 g / 3 oz

Corn, roasted, kernels

227 g / 8 oz

Red onion, medium diced

84 g / 3 oz

Cilantro, fresh, chopped

7 g / 1/4 oz

Minor's Chipotle Flavour Concentrate Gluten Free 6 x 14.4 ounces

30 ml / 2 tbsp.

Red wine vinegar

125 ml / 4 fl.oz

Olive oil

125 ml / 4 fl.oz

Green Onions, cut on a bias

28 g / 1 oz

 

Method

  1. In a mixing bowl, combine the beans, tomatoes, corn, onion, and cilantro and mix thoroughly.
  2. In a second mixing bowl, thoroughly combine the Chipotle Flavour Concentrate, vinegar and oil.
  3. Add the chipotle/oil/vinegar mixture to the black beans and corn. Mix thoroughly.
  4. Fold in green onions and refrigerate until service.
