PREPARATION

Ingredients

Yogurt, plain, low fat

3 cups / 750 ml

Lemon juice

3 Tbsp / 45 ml

Minor’s Sauteed Vegetable Base (Mirepoix),

6 x 1 lb

1 Tbsp / 15 ml

Cucumbers, with peel, seeded, diced

1 cup / 250 ml

Red onions, peeled, diced

1/2 cup / 125 ml

Mint, fresh

1 Tbsp / 15 ml

 

Method

  1. Whisk together the first three ingredients.
  2. Fold in remaining ingredients.
