Stuffed Cookies Made with Coffee Crisp® Spread

250 mL Butter, unsalted softened

250 mL Brown Sugar

125 mL White Sugar

4 mL Baking Soda

2.5 mL Salt

2 pieces Eggs

5 mL Vanilla Extract

5 mL NESCAFE GOLD ESPRESSO

625 mL Flour, all purpose

7.5 mL COFFEE CRISP® SPREAD, chilled in refrigerator

1Heat oven to 350 F.

2Beat butter with paddle in stand mixer on high for 30 seconds. Add sugars, baking soda and salt. Mix until combined. Scrape down sides of bowl add eggs one at a time. Then add vanilla, coffee and mix in. Add flour gradually and mix. Note - Some flour may be need to be mixed by hand.

3Make a round ball 2 tbsp. in size of cookie dough. Place on parchment line pan. Press your thumb in the centre to make a hole. Use a spoon to scoop 1 1/2 tsp. size ball of COFFEE CRISP SPREAD place in hole of dough. Scoop 1 tbsp. size of cookie dough, flatten and place over dough with Coffee Crisp Spread, ensure there are no holes for spread to escape when cooking. Repeat for remainder of cookies. Ensure cookies have enough space on tray to spread while baking - 6 cookies per standard tray.

4Bake for approx. 13-16 minutes until edges are golden brown. Let sit on tray for 2 minutes then place on cooling rack.

5Once cool, enjoy.
