New England Lobster Bisque

Ingredients

Water

48 fl oz / 1.4 ltr

Whole milk

16 fl oz / 473 ml

Minor's Lobster Base

4 oz / 113 g

Roux

8 oz / 454 g

Sherry, dry

2 fl oz / 60 ml

Red pepper, ground

1 tsp / 5 ml

 

Method

  1. Heat water and milk in a large pot over medium-high heat. Add Lobster Base, bring to a boil.
  2. Reduce heat and slowly whisk in roux, gently boil for 3–4 minutes.
  3. Season with sherry and red pepper.
  4. Serving Suggestion: Cooked seafood pieces (lobster meat, shrimp, mussels, monkfish, etc) may be added as garnis.
