60 milligrams Sherry, dry

1Heat water and milk in a large pot over medium-high heat. Add Lobster Base, bring to a boil.

2Reduce heat and slowly whisk in roux, gently boil for 3–4 minutes.

3Season with sherry and red pepper.

4Serving Suggestion: Cooked seafood pieces (lobster meat, shrimp, mussels, monkfish, etc) may be added as garnis.
