Ingredients
  • 1 Bag Trio Brown Gravy Mix 8 x 467 g
  • 4 liters Water, hot
  • 56 grams Mint sprigs, fresh
  • 5.7 kilograms Potatoes, cut and roasted
  • 3 kilograms Asparagus spears, trimmed, roasted
  • 1.5 kilograms Cherry tomatoes, halved, roasted
  • 50 pieces Lamb shanks, frenched, cooked (braised/roasted)
  • 1 gram Mint, fresh (for garnish)
Preparation

    Prepare brown gravy mix with hot water according to package directions.
  • 2
    Once gravy is prepared, add mint sprigs and simmer for 10-15 minutes. Strain out mint.

    Season roasted vegetables to taste.
  • 4
    For one serving, place 4 oz. of roasted potatoes, 2 oz. of roasted asparagus spears, and 1 oz. of roasted cherry tomatoes on the plate.

    Add 1 lamb shank to the plate and sauce with minted brown gravy. Garnish with additional mint leaves to taste.
