Beef Barbacoa Tacos with Fire Roasted Poblano Crema

Ingredients
- Beef Barbacoa, cooked, shredded, 550 g
- 3” Corn Tortilla, warm, 16 each
- White Onion, fine dice, 240 g
Fire Roasted Poblano Crema
- Sour Cream, 227 g
- Yogurt, Greek, 60 g
- MINOR'S® Fire Roasted Poblano Flavour Concentrate, 90 g
- Lime, ½
Garnish
- Cilantro, chopped, 1/2 tsp per taco
- Lime, wedge, 1 per serving
Preparation

1Prepare crema by mixing sour cream, yogurt, Minor’s and lime in a bowl, pulse with a hand blender – place in a squeeze bottle for service

2Top warm tortilla with 35 g hot beef barbacoa, top with 15 g of onion, drizzle with crema and top with cilantro. Plate 2 taco per order.
