Fire Roasted Poblano Corn Chowder

Ingredients
- Butter, unsalted, 113g
- Corn, roasted, kernels removed, 420g
- White onion, diced small, 170g
- Celery, diced small, 125g
- All purpose flour, 170g
- Water, 1.8L
- 35% cream, 125mL
- Minor's® Fire Roasted Poblano Flavour Concentrate (6 x 385 g), 60g
- Minor's® Chicken Base (6 x 454 g), 30g
- Minor's® Roasted Garlic Flavour Concentrate (6 x 454 g), 15g
Preparation

1In a soup pot, combine butter, corn, onion and celery. Sauté over medium high heat for 5 minutes. Add flour and reduce heat; cook for 3-5 minutes to a blond color.

2Whisk together water, cream, Fire Roasted Poblano Flavour Concentrate, Chicken Base and Roasted Flavour Concentrate. Add to soup pot, and continue whisking until the roux is fully dissolved. Simmer for 20 minutes or until the soup thickens.

3Season to taste. Garnish and serve.
