Latin Sweet Potato Mash

Ingredients
- Sweet Potatoes, whole, 1 kg
- Extra Virgin Olive Oil, 15 ml
- Minor's Ancho Flavour Concentrate 6 x 14.4 oz, 30 ml
Preparation

1Preheat the oven to 205°C (400°F). Use a fork to pierce the sweet potatoes all over. Arrange them on a baking tray and bake until tender, usually around 46 to 60 minutes.

2Once out of the oven, allow them to rest for 10 minutes or until they're cool enough to handle. Then, cut them in half, peel off the skin, and place the flesh in a bowl.

3Add olive oil and Minor's Ancho Chipotle Flavour Concentrate and stir to combine.

4Top roasted sweet potato mash with your favourite toppings - such as - toasted pumpkin seeds, roasted peppers or chili's.
