Ingredients
  • Eggs, whole, 200g
  • Egg yolks, 20g
  • Sugar, 120g
  • Salt, 2g
  • All-purpose Flour, 50g
  • Cornstarch, 30g
  • Baking Powder, 2g
  • Vegetable Oil, 45g
  • Vanilla Extract, 8g
  • Ube Extract, 2.5g
For the filling
  • KITKAT® Spread, 425g
For garnish
  • Icing Sugar
Preparation

    Whisk together eggs, egg yolks, sugar, and salt together and heat up over bain marie until the mixture reaches 110*-120*F.

    In a stand mixer whip up the heated egg mixture until ribbon stage.

    Sift the dry ingredients into the egg foam, and fold until fully incorporated.

    In a separate mixing bowl, take a 1/3 of the mixture and combine with the vegetable oil, vanilla extract, and the ube extract then fold back into the entire mixture.

    In a 1/2 baking sheet lined with parchment paper, pour the batter and spread out evenly.

    Bake at 350*F for 13minutes, rotating halfway, then dust with powdered sugar before pre-rolling until cool.

    Spread the KITKAT® Spread onto the cake sheet, roll, then chill.

    Garnish with a light dusting of icing sugar and serve!

To achieve a light and fluffy texture in the cake, make sure to whip the egg mixture until it reaches the ribbon stage. This will incorporate air into the batter and result in a soft and airy cake.
