Apple Mango Salsa

A unique salsa, perfect on a seared piece of fish or served with tortilla's.

PREPARATION

Ingredients

Vegetable oil

250 ml / 1 cup

Rice vinegar

125 ml / 1/2 cup

Minor's Sautéed Vegetable Base, Gluten Free

6 x 1 pound

12 g / 2 tsp.

Mango, ripe, peeled, pitted, small diced, 4 cups

454 g / 16 oz

Apples, peeled, cored, small diced, 2 cups

272 g / 9.5 oz

Red bell pepper, small diced, 1 cup

113 g / 4 oz

Red onion, fine diced, 1/2 cup

56 g / 2 oz

Chili pepper, Jalapeño, fine diced, 2 tbsp.

28 g / 1 oz

 

Method

  1. In a medium bowl, combine vegetable oil, rice vinegar and Sautéed Vegetable Base using a wire whip until well blended.
  2. Fold in mangoes, apples, red peppers, onion and jalapeno. Chill and hold in refrigerator for service.

Use on fish, or serve as a garnish.
