KITKAT® Ube Swiss Roll

Ingredients
- Eggs, whole, 200g
- Egg yolks, 20g
- Sugar, 120g
- Salt, 2g
- All-purpose Flour, 50g
- Cornstarch, 30g
- Baking Powder, 2g
- Vegetable Oil, 45g
- Vanilla Extract, 8g
- Ube Extract, 2.5g
For the filling
- KITKAT® Spread, 425g
For garnish
- Icing Sugar
Preparation

1Whisk together eggs, egg yolks, sugar, and salt together and heat up over bain marie until the mixture reaches 110*-120*F.

2In a stand mixer whip up the heated egg mixture until ribbon stage.

3Sift the dry ingredients into the egg foam, and fold until fully incorporated.

4In a separate mixing bowl, take a 1/3 of the mixture and combine with the vegetable oil, vanilla extract, and the ube extract then fold back into the entire mixture.

5In a 1/2 baking sheet lined with parchment paper, pour the batter and spread out evenly.

6Bake at 350*F for 13minutes, rotating halfway, then dust with powdered sugar before pre-rolling until cool.

7Spread the KITKAT® Spread onto the cake sheet, roll, then chill.

8Garnish with a light dusting of icing sugar and serve!
To achieve a light and fluffy texture in the cake, make sure to whip the egg mixture until it reaches the ribbon stage. This will incorporate air into the batter and result in a soft and airy cake.
