A variety of global ingredients are poised for growth and can provide interesting new takes on existing menu items or serve as attention-grabbing promotions. Many Canadian operators are looking to Central and South America for inspiration. These regional cuisines appeal to consumers who want to try something new, while still providing elements of comfort or familiarity. Consider Salvadoran, Dominican and Honduran dishes or ingredients, such as Honduran-style baleadas tacos, Bolivian empanada-like saltenas or ingredients such as Dominican garlic-based wasakaka sauce.
Global twists don’t need to be limited to entrees—they can be equally exciting on the appetizer, dessert or beverage menu. Bubble teas, chai lattes, horchata and aqua frescas are just a few examples of beverages that can boost appearance of variety on the menu.
