Sustainability and Social Justice Initiatives Are Back on Track

Many sustainability initiatives had to be placed on the back burner during the pandemic, but now companies and consumers have a renewed focus on the health of our planet and our communities.

Consider the use of environmentally friendly packaging or working with suppliers that demonstrate a commitment to community or responsible sourcing. Swapping some plant-based options into the menu can demonstrate an effort to improve sustainability as well. Waste-reduction through upcycling ingredients can improve sustainability while also potentially reducing back-of-house costs. Using ingredients with a longer shelf life (e.g. pickled ingredients, frozen vs. fresh, etc.) can also help improve sustainability overall. In addition to reducing waste, replacing some ingredients with those that have been pickled, fermented, dehydrated or freeze-dried not only extends shelf life but can also add some new texture or flavour to a menu item. Finally, remember that social justice is important, too, specifically among younger consumers. As part of that, they are particularly interested in knowing that restaurant employees are treated well. Communicate how you celebrate and take care of your staff! And don’t be shy about letting them know how you support various communities or causes.
