Preparation

For food safety and optimal quality, follow these COOKING instructions. Cooking time may vary based on equipment and quantity cooked in equipment. Check for doneness using a thermometer. Equipment: Water Bath (185-190°F/85-90°C). Frozen: 100-110 minutes. Tempered: 75-80 minutes. Handling Instructions: Place plastic pouch(es) in 185-190°F/85-90°C water in steam jacketed kettle or water bath. Do not over crowd. Allow water to return to temperature before timing. Heating time will vary depending upon number of pouches to be heated. Turn pouch(es) 2-3 times during heating. Prior to serving, gently shake pouch(es). Equipment:  Retherm Cart Systems  Frozen:  Not recommended  Tempered:  As per cart manufacturer's instructions. Product may be thawed under refrigeration 40°F (4°C) for no more than 48 hours. DO NOT REFREEZE. Product must be cooked to an internal temperature of 165°F (74°C).
